Ingredients for Black-Eyed Pea Soup
- 1 bag dried black-eyed peas (rinse & soak overnight or quick-soak)
- 1/2 large onion, diced
- 1 jalapeño, diced (remove seeds for less heat)
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can Rotel tomatoes (with green chilies)
- 6-8 cups of chicken broth or water
- 2 cups fresh collard greens, chopped
- 1 lb spicy sausage links, sliced into rounds
- 1 tsp Old Bay seasoning (more to taste)
- Salt & black pepper, to taste
- 1 cup half & half (stirred in at the end)
- Garnish: sour cream, fresh herbs (optional)

Instructions for Black-Eyed Pea Soup

1. Sauté the Base
In a large Dutch oven, cook the sausage slices over medium heat until browned. Remove and set aside. In the same pot, add onion, jalapeño, carrots, and celery. Sauté for 5–7 minutes until softened.
2. Build the Flavor

Add in the Rotel tomatoes, soaked black-eyed peas, Old Bay, salt, and pepper. Stir well to coat everything in the seasonings.
3. Simmer the Soup

Pour in enough water or chicken broth to cover the peas by about 2 inches. About 6-8 cups. Bring to a boil, then reduce heat and simmer for about 45–60 minutes, until peas are tender. Stir occasionally and add more liquid if needed.
4. Add the Greens & Sausage
Once the peas are nearly tender, add the fresh collard greens (frozen is ok too) and the cooked sausage back into the pot. Continue simmering for another 15–20 minutes.

5. Finish Creamy
When everything is cooked through, stir in the half & half for a rich, creamy finish. Taste and adjust seasoning if needed.
6. Serve & Garnish
Ladle into bowls, garnish with a dollop of sour cream, and serve with warm cornbread or crusty bread on the side.
