This holiday breakfast casserole is full of Christmas colors with flavourful sausage, eggs, cheese, red and green bell peppers. It’s very easy to put together, making it the perfect holiday breakfast casserole!

Breakfast is one of my favorite family meals, breakfast foods are always a hit with the whole family and usually easy to prepare. This casserole is my go-to for feeding a crowd and the best way to make Christmas brunch!

This holiday breakfast casserole with colorful bell preppers, sausage, egg and cheese makes one of the best one pan style meals. However you could also pair it with a side of hash browns, tomato slices, fresh fruit etc.

MY KITCHEN ESSENTIALS:

Easy Directions:

1. Cook the ground sausage in a large skillet on medium until cooked through. Set aside the brown sausage.

Tip: Maple or sage sausage adds amazing flavour to this dish!

2. Preheat the oven to 350 degrees

In a large bowl, combine egg, milk, salt & pepper.

3. Spray a large casserole dish with nonstick cooking spray. Layer the bread on the bottom of the dish.

4. Top bread with the sausage and pepper mix.

5. Pour eggs over the sausage and bread last.

6. Top with cheese.

Bake for 45 minutes.

Enjoy!

Tip: A 9×13″ casserole dish works best.

This breakfast casserole is great for special occasions like Christmas morning, Father’s Day, or Easter Brunch. It’s the perfect breakfast casserole for holiday mornings!

How to Store This Breakfast Casserole:

It can be wrapped in plastic wrap, stored in the fridge and saved for the next day. Or keep leftovers in an airtight container for the next morning.

Equipment

  • 1 9 X 13 baking dish

Ingredients
  

  • 1 cup cooked drained sausage any kind, turkey, sage, maple ect.
  • 8 eggs
  • 1 cup milk
  • 1 cup cheese
  • 1 diced yellow onion
  • 1/2 cup red bell pepper
  • 1/2 cup green bell pepper
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 sliced toast cubed

Instructions
 

  • Brown sausage in skillet, drain. Add in onions, bell peppers and saute for 3 minutes.
  • Toast bread and cube.
  • Grease a 9 x13 baking dish and place toast sprinkled on bottom of pan.
  • Mix together eggs, salt pepper and milk.
  • Top the toast with sausage and bell pepper mix.
  • Pour the egg mixture over the sausage and bread.
  • Lastly sprinkle with cheese.
  • Bake for 45 minutes at 350 degrees.
  • Enjoy!
