There is nothing better than a warm cozy bowl of soup on a chilly night. This is my favorite way to make chicken noodle soup and it even passes my sons picky eater test too! This easy creamy chicken noodle soup recipe is really easy to make and super quick too!

I just made a big pot tonight in less than 30 minutes and my son came back for seconds! If you are looking for a soup everyone will enjoy then you must try this recipe. The easiest way to make this soup is shredding up a rotisserie chicken. It’s already cooked and saves time. Of course you can boil chicken breasts first and shred them if you want to.

I love topping this soup with fresh parsley as a beautiful garnish that is super healthy too. Oh and if you like a little spiciness add an extra 1/2 tsp of cayenne pepper for a fun spicy kick. But be careful, a little goes a long way here with cayenne pepper. You can also top with jalapeños and a splash of lemon or lime too ~ perfect for fighting colds.

Easy Creamy Chicken Noodle Soup

This is the easiest and most delicious chicken noodle soup! Perfect for a cozy dinner.

Ingredients
  

  • 1 chopped onion
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 whole shredded rotisserie chicken
  • 1/2 tsp cayenne pepper
  • 4 cloves chopped garlic
  • 1 tsp salt and pepper
  • 1 tsp herbs de Provence
  • 1/2 bag wide egg noodles
  • 1 tsp nutmeg
  • 1 box chicken broth
  • 2 cups water
  • 2 bay leaves
  • 1 cup half & half
  • 1/2 cup fresh parsley garish

Equipment

  • 1 dutch oven
  • 1 spoon
  • 1 knife
  • 1 cutting board

Method
 

  1. Sauté onion, garlic, celery and carrots in a large dutch oven pan for about 7 minutes.
  2. Add all seasonings.
  3. Add in chicken.
  4. Stir in chicken broth, bring to a boil.
  5. Lower to a simmer and add in noodles and 2 bay leafs. Cover and cook for about 15-20 minutes.
  6. Stir in half & half.
  7. Garnish with fresh chopped parsley.

Notes

If you want a thicker soup, u can add in a tbsp of corn starch to the broth.
