✨ What Makes This “Fancy”?
This isn’t your average street corn salad…
- Lightly charred sweet corn for a smoky depth of flavor
- A blend of creamy mayo + crème fraîche for a richer taste
- Fresh lime zest (not just juice!) for brightness
- Crumbled cotija for a luxe, salty finish
- A drizzle of hot honey for a little elevated sweetness
- Garnished beautifully with fresh cilantro for that fancy look

Ingredients
- 2 cups sweet corn (grilled or roasted)
- 4 cups of chopped chicken breast or shredded rotisserie chicken
- ½ finely chopped red onion
- ½ finely chopped red bell pepper
- ½ finely chopped green bell pepper
- ½ jalapeño finely chopped (remove seeds-unless of course u like lots of spice)
- ½ cup mayonnaise
- ½ cup crème fraîche (or Greek yogurt)
- ½ cup cotija cheese, crumbled
- Juice of 1 lime + zest
- ½ tsp chili powder
- ½ tsp smoked paprika
- ½ tsp cumin
- 1–2 tsp hot honey
- Salt & pepper to taste
- Fresh cilantro, finely chopped

Instructions
- Char the corn (Tip: you can also use frozen fire grilled corn)
Grill or roast your corn until slightly blackened for that smoky flavor. Let cool. - Make the dressing
In a large bowl, whisk together mayo, crème fraîche or greek yogurt, lime juice + zest, cumin, chili powder, and smoked paprika. - Combine:
Add the corn, jalapeno, red onion, bell peppers and chicken, toss until fully coated. - Elevate it:
Fold in cotija cheese, and fresh chopped cilantro. - Finish:
Drizzle with hot honey and sprinkle with extra cheese, chili powder, and fresh herbs.

Note: I found these two seasonings and they are amazing. (Season to taste). If you don’t have a Trader Joe’s grocery store near you, it’s ok! The seasonings in recipe above work beautifully and are tried and true!
How to Serve
Serve in a big beautiful white bowl and top with:
- Extra lime wedges
- A light dusting of chili powder
- Serve with lettuce cups for the perfect lettuce wraps!
- Serve with Frito’s Corn chips and make it as a fun dip!
- Use it in a sandwich or wrap.
