Fancy Elote Chicken Salad

Creamy, smoky, and irresistible, this fancy elote chicken salad is packed with bold Mexican street corn flavors. An easy summer recipe perfect for lunches, BBQs, and quick meals.

Ingredients
  

  • 2 cups sweet corn grilled or roasted
  • 4 cups of chopped chicken breast or shredded rotisserie chicken
  • ½ finely chopped red onion
  • ½ finely chopped red bell pepper
  • ½ finely chopped green bell pepper
  • ½ jalapeño finely chopped remove seeds-unless of course u like lots of spice
  • ½ cup mayonnaise
  • ½ cup crème fraîche or Greek yogurt
  • ½ cup cotija cheese crumbled
  • juice of 1 lime + zest
  • ½ tsp chili powder
  • ½ tsp smoked paprika
  • ½ tsp cumin
  • 1-2 tsp hot honey
  • salt & pepper to taste
  • fresh cilantro finely chopped

Method
 

  1. Char the corn (Tip: you can also use frozen fire grilled corn)
  2. Grill or roast your corn until slightly blackened for that smoky flavor. Let cool.
  3. In a large bowl, whisk together mayo, crème fraîche or greek yogurt, lime juice + zest, cumin, chili powder, and smoked paprika.
  4. Add the corn, jalapeno, red onion, bell peppers and chicken, toss until fully coated.
  5. Fold in cotija cheese, and fresh chopped cilantro.
  6. Drizzle with hot honey and sprinkle with extra cheese, chili powder, and fresh herbs.

Notes

Serve in a big beautiful white bowl and top with:
  • Extra lime wedges
  • A light dusting of chili powder
  • Serve with lettuce cups for the perfect lettuce wraps!
  • Serve with corn chips and make it as a fun dip!
  • Use it in a sandwich or wrap.
Goes great alongside grilled shrimp skewers, steak, or as part of a delightful outdoor brunch spread.
