- Char the corn (Tip: you can also use frozen fire grilled corn)
- Grill or roast your corn until slightly blackened for that smoky flavor. Let cool.
- In a large bowl, whisk together mayo, crème fraîche or greek yogurt, lime juice + zest, cumin, chili powder, and smoked paprika.
- Add the corn, jalapeno, red onion, bell peppers and chicken, toss until fully coated.
- Fold in cotija cheese, and fresh chopped cilantro.
- Drizzle with hot honey and sprinkle with extra cheese, chili powder, and fresh herbs.
Notes
Serve in a big beautiful white bowl and top with:
- Extra lime wedges
- A light dusting of chili powder
- Serve with lettuce cups for the perfect lettuce wraps!
- Serve with corn chips and make it as a fun dip!
- Use it in a sandwich or wrap.
