Healthy Chicken Bowls

Looking for a healthy lunch idea? Here is the recipe for the best lunch ever. Simple and easy to make. This is my favorite lunch and I probably have it 3 times a week. Chicken bowls are packed with protein and vegetables. This is a great lunch to bring to work as well. You can even make a few bowls ahead of time for the week.

My Mediterranean chicken bowl can be made with different options depending on what you have in your fridge. Start with a base such as brown rice or quinoa. Add beans like black beans or garbanzo beans. Add grilled chicken (diced). Top with any vegetables you have on hand. One of my favorite recipes is made with chicken, quinoa, black beans, cherry tomatoes, sweet potato, cilantro and lime squeezed with a drizzle of fresh lemon juice, chopped garlic mixed with California olive oil.

You can also make an amazingly tasty chicken bowl with rice, garbanzo beans, chopped cucumbers, halved cherry tomatoes, topped with feta cheese, avocado, lemon garlic and olive oil.

Lunch Containers

Chicken bowls are a healthy lunch idea for feeling great. Whenever I eat healthy I feel so much better than if I were to grab fast food on the go. Having a healthy lunch prepared in a container with a lid is the way to go. To find containers for lunches like this check out Amazon. They have many options for lunch storage and convenience. It just makes life that much easier when you have a good container to make your lunches with and take with you on the go for work or school.

Mediterranean Chicken Bowl

Ingredients
  

  • 1/4 cup Olive Oil
  • 1 clove fresh chopped garlic optional
  • 1 Lemon juice
Chicken bowl
  • 1/2 cup chopped tomatoes
  • 1 cup quinoa
  • 1/2 cup diced cucumber
  • 1 cup grilled chicken breast
  • 1/2 cup garbanzo beans
  • 1 chopped cilantro
  • 1/4 cup feta cheese
  • 1/2 cup chopped avocado

Method
 

  1. Start with quinoa base, add chicken, cucumbers, tomatoes, beans, garnish with feta cheese then top with cilantro. Mix olive oil, lemon and garlic in a small bowl for your dressing. Drizzle on top and serve. Enjoy!
