Blackberry Lemon Chicken Ingredients:
- 4 boneless skinless chicken breasts
- 2 tablespoons olive oil
- 1 cup of fresh blackberries
- 4 garlic cloves, minced
- half onion sliced
- Juice of 1 lemon
- splash of white wine
- splash of pure maple syrup
- Zest of 1 lemon
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons butter
- Lemon slices for baking

Directions:
- Preheat your oven to 400°F.
- Pat the chicken breasts dry with paper towels. If needed, lightly pound them so they are an even thickness for more even cooking.
- In a small bowl, mix together the olive oil, white wine, maple syrup, garlic, lemon juice, lemon zest, thyme, salt, and pepper.
- Place the chicken breasts on top of the sliced onions in a baking dish and coat them evenly with the lemon maple garlic mixture.
- Add small pieces of butter over the chicken and tuck lemon slices and blackberries around the dish for extra flavor.
- Bake uncovered for 20–26 minutes, depending on thickness, until the chicken reaches an internal temperature of 165°F.
- Let the chicken rest for 5–10 minutes before slicing to keep it juicy and tender.
