🍋 Lemon Square Ingredients:

Crust

  • 2 sticks unsalted butter, (room temperature)
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt

Filling

  • 6 extra-large eggs, at room temperature
  • 2 1/2 cups granulated sugar
  • 1 1/2 tablespoons grated lemon zest (about 3–5 lemons)
  • 1 cup freshly squeezed lemon juice
  • 1 cup all-purpose flour
  • Powdered sugar, for dusting

Instructions:

Preheat your oven to 350°F.

For the Crust:

Mix the butter and sugar until light in the bowl of an electric mixer or by hand. Combine the flour and salt. Add the butter until mixed. Place the dough on a lightly floured clean surface and then shape into a round ball. Flatten the dough by pressing it into a 9 x 13 inch baking pan building up a 1/2 inch edge on the sides. Chill in fridge for 10 mins.

Tip: lining your pan with parchment paper really helps when removing from the pan.

Bake for 15–20 minutes, until lightly golden. Let cool slightly.

For the Filling:

Mix together the eggs, sugar, lemon zest, lemon juice, and flour until smooth. Pour over the warm crust and bake for 30–35 minutes, until the filling is baked to perfection.

Allow to cool completely to room temperature before cutting into squares. Finish with a light dusting of powdered sugar. I used this rose stencil for a even fancier batch. I love it because it looks so pretty when serving at a party.
