Step 1: Preheat oven to 350°F (175°C). Lightly butter a 9x13 baking dish or deep casserole dish.
Step 2: In a bowl, toss the sliced peaches with sugar, corn starch, vanilla, bourbon. cinnamon, and lemon juice. Set aside while you make the batter.
Step 3: In another bowl, whisk together flour, sugar, baking powder, and salt. Stir in milk and vanilla until smooth.
Step 4: Pour the melted butter into the baking dish. Then pour the batter right over the butter—do not stir!
Step 5: Spoon the peaches evenly over the batter. Again—don’t stir! The batter will beautifully rise and surround the peaches as it bakes.
Step 6: Bake for 40–45 minutes or until the top is golden and the edges are bubbling.
Step 7: Let cool for 10 minutes, then serve warm with vanilla ice cream or fresh whipped cream.
