The Best Peach Cobbler Recipe Ever

Ingredients
  

For the Peaches
  • 5 cups sliced fresh peaches or 2 lbs frozen, thawed and drained
  • ½ cup granulated sugar
  • 1 1/2 tsp vanilla extract
  • 2 tbsp corn starch
  • splash of bourbon 2 tablespoons for extra flavor, optional
  • 2 tsp cinnamon
  • 1 tsp lemon juice optional but brightens it up
For the topping:
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 2 tsp baking powder
  • ¼ tsp salt
  • ¾ cup milk
  • 1 tsp vanilla
  • ½ cup 1 stick unsalted butter, melted

Equipment

  • 1 Baking Dish
  • 1 mixing bowl
  • 1 Pairing Knife
  • 1 Mixing Spoon

Method
 

  1. Step 1: Preheat oven to 350°F (175°C). Lightly butter a 9x13 baking dish or deep casserole dish.
  2. Step 2: In a bowl, toss the sliced peaches with sugar, corn starch, vanilla, bourbon. cinnamon, and lemon juice. Set aside while you make the batter.
  3. Step 3: In another bowl, whisk together flour, sugar, baking powder, and salt. Stir in milk and vanilla until smooth.
  4. Step 4: Pour the melted butter into the baking dish. Then pour the batter right over the butter—do not stir!
  5. Step 5: Spoon the peaches evenly over the batter. Again—don’t stir! The batter will beautifully rise and surround the peaches as it bakes.
  6. Step 6: Bake for 40–45 minutes or until the top is golden and the edges are bubbling.
  7. Step 7: Let cool for 10 minutes, then serve warm with vanilla ice cream or fresh whipped cream.
