Fresh Watermelon Feta & Basil Salad

So refreshing and delicious! This salad is sweet and salty. Perfect for summertime picnics, barbeques, potlucks or outdoor parties.

Ingredients
  

  • 6 cups fresh watermelon cubed
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh basil chopped
  • 2 tablespoons fresh mint chopped
For the Honey Lime Dressing
  • 2 tablespoons champagne vinegar
  • Juice of 1 lime
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon honey
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper

Equipment

  • 1 large mixing bowl
  • 1 knife
  • 1 large spoon
  • 1 cutting board

Method
 

  1. Place the cubed watermelon in a large serving bowl.
  2. Add the crumbled feta, chopped basil, and fresh mint.
  3. In a small bowl, whisk together the champagne vinegar, lime juice, olive oil, honey, salt, and pepper.
  4. Drizzle the dressing over the watermelon mixture.
  5. Gently toss until everything is evenly coated.
  6. Serve immediately or chill for 15-30 minutes before serving.
