Turkey Renewal Garden Soup Ingredients:
- 1 head cabbage, chopped
- 1 onion, diced
- 1lb ground turkey
- 2 cloves garlic, minced
- 6 cups vegetable broth
- 1 can diced tomatoes
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup zucchini, chopped
- 1 can of cannelloni beans
- 1 teaspoon cayenne pepper (*for a kick of spice)
- 2 teaspoons turmeric (*anti inflammatory benefits)
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Top with fresh Parmesan cheese
Instructions:
- In a large pot or dutch oven, saute the diced onion over medium heat. Add the minced garlic until fragrant and translucent. Add the ground turkey and brown.
- Add the chopped cabbage, carrots and celery to the pot and cook until slightly softened, stirring occasionally.
- Pour in the vegetable broth and diced tomatoes with their juices. Stir to combine.
- Add the zucchini and beans to the pot. Season with dried thyme, dried oregano, salt, and pepper.
- Bring the soup to a boil. Then reduce the heat to low and let it simmer. Cover the soup and let it simmer for about 20-25 minutes. Continue simmering until the vegetables are tender.
- Taste and adjust the seasoning if needed.
- Serve the soup hot, garnished with fresh Parmesan cheese.
