Ingredients

  • 1 lb Ground turkey
  • 1/2 cup Crumbled feta cheese
  • 1 Egg
  • dash Sea salt + black pepper
  • dash Dried thyme
  • 1/2 of one Finely chopped jalapeño
  • 1/2 of one Finely chopped red pepper
  • 1/4 cup Chopped green onion
  • For serving:
  • Arugula
  • Mayo + Dijon mustard
  • Lettuce wraps (butter lettuce or iceberg) for a low-carb option or buns if preferred

Equipment

  • 1 mixing bowl
  • 1 Large Frying Pan or Outdoor Grill
  • 1 Spatula
  • 1 Serving platter or plate

Method

  1. In a bowl, combine the ground turkey, feta, beaten egg, salt, pepper, thyme, jalapeño, red pepper, and green onion. Mix gently until just combined, try not to overwork the meat so the burgers stay tender.
  2. Form into patties and cook on a grill or stovetop pan over medium heat until cooked through and golden on the outside.
  3. Top each burger with fresh arugula and a simple mix of mayo and Dijon mustard for a creamy, tangy finish.

Notes

For a lighter, low-carb option, wrap them in crisp lettuce leaves, they’re just as satisfying and feel extra fresh for summer.
