Ingredients
  

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups buttermilk
  • 2 large eggs
  • 1/4 cup unsalted butter melted
  • 1 teaspoon vanilla extract

Instructions
 

  • Mix the Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • Combine Wet Ingredients: In another bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract until smooth.
  • Make the Batter: Pour the wet ingredients into the dry ingredients and gently mix until just combined. The batter should be slightly lumpy—try not to overmix.
  • Heat the Pan: Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.
  • Cook the Pancakes: Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set (about 2 minutes), then flip and cook for another 1-2 minutes until golden brown.
