Fancy Waldorf Chicken Salad

This classic salad is a favorite fancy lunch perfect to serve at baby showers, brunches, lunches, tea parties or weddings. Originally created in the 1900's by the famous Waldorf hotel in New York City. My version has pecans and raisins instead of just walnuts as they originally used but you can use your preferred nut or what is in your pantry. Enjoy!

Ingredients
  

  • 2 cups shredded chicken
  • 2 apples diced
  • ½ cup seedless red grapes halved
  • ¼ cup chopped celery
  • ¼ cup pecans chopped
  • 1/3 cup raisins
  • 1/4 cup mayonnaise or Greek yogurt
  • 1 tbsp lemon juice

Method
 

  1. In a bowl, whisk together mayonnaise (or yogurt) and lemon juice.
  2. Add chicken, apples, grapes, celery, and pecans. Toss well.
  3. Chill before serving.

Notes

Tip: Use honeycrisp apples for extra sweetness and crunch!
