Ingredients
  

  • 3 cups rotisserie chicken finely chopped (key for texture)
  • ½ cup good-quality organic mayonnaise
  • 2 tablespoons sour cream lightens everything
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey
  • ½ teaspoon sea salt or to taste
  • ¼ teaspoon fresh ground black pepper
  • ¼ teaspoon garlic powder
  • ½ teaspoon celery seed
  • ½ cup granny smith green apples very finely diced
  • ¼ cup dried cranberries sliced in quarters
  • ¼ cup toasted sliced walnuts lightly crushed
  • 2 tablespoons fresh dill finely chopped
  • Optional but amazing: 1 tablespoon finely diced red onion.
  • Optional If you are into spice half of a seeded & finely sliced jalapeño for a spicy kick.

Method
 

  1. In a large bowl, whisk together mayonnaise, sour cream, Dijon, lemon juice, honey, salt, pepper, and garlic powder until smooth.
  2. Add the finely chopped chicken and gently fold to coat.
  3. Stir in cranberries, apples, walnuts, dill, and red onion (if using).
  4. Taste and adjust seasoning — a pinch more salt makes all the difference.
  5. Cover and chill for at least 30 minutes.
  6. ✨ It tastes even better the next day.
