How to Make a Bright & Healthy Spring-Inspired Vegetable Lentil Soup You’ll Love

Ingredients You’ll Need:

  • 2 cups of French green lentils
  • 2 tbsp olive oil
  • 1 small onion, diced
  • 3 carrots, chopped
  • 3 celery stalks, chopped
  • 1 small peeled and diced sweet potato or (3 small potatoes)
  • 1 cup of diced butternut squash (zucchini squash is good too!)
  • 3 cups of fresh spinach
  • 1 clove of fresh garlic, minced
  • 1 tsp cinnamon
  • 2 tsp turmeric
  • 2 tsp ground ginger
  • 1 tsp ground cumin
  • 2 tsp sea salt
  • 1 tsp black pepper
  • 3 tsp tomato paste
  • 8 cups vegetable stock
  • ½ cup dry white wine (optional but recommended!)
  • 1 can of 13 oz coconut milk
  • Squeeze of one lemon
  • Sour cream for garnish
  • Crusty bread for serving (because, why not?)

How to Make It:

  1. Sauté the Aromatics – Heat olive oil in a large pot over medium heat. Add onions, carrots, squash, and celery. Sauté until softened (about 10 minutes).
  2. Add the Garlic – Stir in the spices. Cinnamon, ginger, turmeric, cumin, salt & pepper. Cook for another few minutes until fragrant.
  3. Deglaze with Wine – Pour in the white wine to deglaze the pot, scraping up any flavorful bits.
  4. Simmer to Perfection – Add the lentils and broth. Bring to a boil, then reduce heat and simmer uncovered for 30–40 minutes until lentils are tender.
  5. Stir in – lemon juice and coconut milk until combined.
  6. Serve – In a bowl add a dollop of sour cream if desired. Serve with a slice of crusty warm bread and enjoy!
