Best Lemon Blueberry Loaf Recipe With Glaze

Here’s what you’ll need to make this delicious loaf recipe:

For the loaf:

  • 1 and 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 2 large eggs, at room temperature
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 and 1/2 cups fresh blueberries

For the glaze:

  • 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan and set aside.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large mixing bowl, beat the butter and sugar until light and fluffy, about 2-3 minutes. Add the eggs one at a time, beating well after each addition.
  4. Mix in the Greek yogurt, lemon zest, lemon juice, and vanilla extract until well combined.
  5. Add the dry ingredients to the wet ingredients and mix until just combined.
  6. Fold in the blueberries gently.
  7. Pour the batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the loaf cool in the pan for 10 minutes before removing it from the pan and placing it on a wire rack to cool completely.
  9. To make the glaze, whisk together the powdered sugar and lemon juice until smooth.
  10. Drizzle the glaze over the cooled loaf and let it set for a few minutes before slicing and serving.
